Kumaoni Rajma refers to kidney beans grown in the high-altitude mountain farms of Uttarakhand. Cultivated using traditional methods, these beans are prized for their creamy texture, nutty flavour, and quick cooking time—qualities shaped by the region’s pure soil and Himalayan spring water. Rich in protein, fibre, and iron, Kumaoni Rajma is typically slow-cooked with  fewer spices allowing the natural flavor of the beans to shine.
